Yeah. What's more, the same kind of bread from different makers can have significantly different GI. The sugar content of fruit (and so, presumably, its GI) varies with all sorts of things. So I completely agree that it's not that simple.

It's probably possible somewhere in the world. If something is published, it's published most everywhere (which has led to some defamation cases being heard in some rather odd places IIRC). So I agree it'll probably happen sooner or later.
