The statistics thrown around are 75-80% of new restaurants won't last the first two years.[1] That day want terribly surprise me, as I spent a sizeable portion of my career travelling around fixing restaurants. Biggest issue I've

Interesting. Howany hours are you working per day? I'm doing 12+ so that's probably adding to the exhaustion factor a lot. Might be interesting to try this without working insane hours haha.

As someone who is getting 5 hours of sleep and travelling to work/working/travelling home every day at the moment (short staffed and busy period), I can guarantee that it is not qualify time. Even if I had a day off, doing anythin

> Those 5 weeks of paid vacation feel more like an insult than a benefit. Now imagine not having them. I moved from Australia where (due to my contract) I had 6 weeks per year, now in Japan I have two. Feels a lot worse than having them.

That's an interesting point of view from my perspective. Most people I know are trying to pay bills and save for a house deposit. The one's purchasing for social status are regarded as wasting their time generally (and speaking f

As much as I agree (and I upvoted you), I do think that ship has sailed. Same as hacker has different meanings when used here on HN and on most news articles.

I am the same as you, alas I cannot afford not to work the hours I do (for which I have copped quite a bit of flack on HN about). I do wonder why people who can afford to spend time with their family and not work 60-70 hours per week, actua

Well we are full every night (I can't remember a night in the last 3 weeks we haven't been at least 75% full at one stage). So at least enough are voting for quality here.

I doubt anyone on HN is close enough, it's in Ibiraki Japan - a little far for most of the people on here. (Note most of my experience is in Australia btw)

I agree it is semantics, but it shouldn't be in my opinion. While it will never happen, I would prefer to call yourself a restaurant you would need to prove that you had hired qualified chefs and that you were producing all the for you

From my experience, it is pretty much down to how much you're willing to pay. When I was younger and worked in lower quality places, a lot would be purchased through a supplier (although very rare to see premade items purchased), where

Oh I'm going to try that rabbit dish. These sound quite interesting (and fairly straight forward compared to other 'traditional/regional' dishes that I have been trying lately).

We have machines for that. Btw you don't need to toss the dough, that's just for looks, as for flattening and spreading, it's fairly standard and straight forward if everything is portion controlled correctly. Source: 17 year

Correct, I'm hoping to move a little closer to work to cut some of that commute off soon. My day off is all about family, so it's daily planned :-)

Well I have a wide and son, which I quite enjoy spending time with. Not sure how you managed to take from anything I said that I don't. Some of us don't have a choice but to work jobs that require that many hours to pay the bills.

I do that, I'm not the owner either. My wife just had a son, so I definitely have a family. Add on top an hour and a half commute each way and it can be a little difficult at times to have family time I'll admit.

Wouldn't anyone on this site, if they had the knowledge of that, make a competing product? Or perhaps some of us are? That's a fairly lazy question, and I cannot see how it would really start a good conversation.

I certainly don't make as much doing this as I would coding. The best I've gotten so far was 2k Au a week while running three restaurants as an exec. Hospitality in general isn't the best industry for making money, although I

I'd like to add onto this point. Started cheffing at 17, always wanted to code, self taught enough to be qualified as a chef and get a job programming for a fairly large company by 22. It sucked. As you said, waiting for assignments, n
