I'm a Github user because of the convenience it affords, and I appreciate that. But if I had a mature open source project that wasn't trying to 'grow' as fast as possible, I'd move it off the service.

Tandem looks interesting. However a cursory look at the source reveals that it actually uses the diff-match-patch technique and not OT, which is fine for plaintext, but ultimately a bad choice for Quill... To be fair, I have not investigate

Krita is actually built on Qt libraries, just like VLC and even some of Photoshop. Which makes it look native on most platforms, and AFAIK won't require X11 on OS X -- because Qt uses Cocoa there.
