I wonder how well that would work here in Japan. You don't see as many people working on laptops in a coffee shop here, but you do see an awful lot of English teaching and students studying

I just want to chime in here: seishein(full time permanent) workers over here get a lot of protection mandated by law. For example if my company closes, they have to pay me 3 months of my salary while I find a new job, and I'm quite di

Side note: how did you not go to high school and end up in tech(assuming here), just curious, you don't have to answer of course :-)

Oh I hadn't heard of that. As a chef I'm definitely going to do some research on that! Any particular favourites?

That is common here, I'm an Aussie with a Japanese wife, I just invited her grandparents to live with us. (Grab spa is old and grandma has to look after him, this way we can help, and grandma can help my wife when we have a child)

As someone living in Japan with friends in Korea, this is rather true.

A lot of this is industry myth. Often passed around, but very rarely used. Example: Items that the chef wants to sell - I want everything to sell, fairly evenly (to keep my stock rotating and to minimise wastage.) The no dollar sign? Yeah

What's the reasoning behind this ? Honest question. I'd like to think if that were true, WikiLeaks would be replaced with a new group that releases more.

Reading your replies(can't watch the video, I'm at work - chef here), really makes me wish I was back coding. Which would give me time to do things like this! Do you have a blog or is this a one off? Edit: found the link lower :-)

I wish it supported Japanese. Combined with a GitHub repo to auto table scanned images would really help me out in my restaurant(I can't read Japanese very well, and we'll, in Japan all my receipts are in Japanese obviously haha).

I wonder how all that would change if you only had a portion of any of the files, at what point would they draw the line? Either way it's a damn difficult question to answer, but God's be damned if I wouldn't prefer a distrib

I find even as a chef I have kept the same habits as when programming. When I on my kitchen at 10am, I'm a pure zombie, give me my coffee, let me prep and get the hell out of my way. But 8-9pm when I'm cleaning up , yeah I start g

I do agree with you, the number of chefs i have interviewed who take 'short-cuts' with safety, hygiene and quality is... saddening.

A good chef will put a wok with fresh oil on and fry the gluten free in that(we can use that oil in our normal fryer top up).

I said it above but i want to say it again - in a well run kitchen, there should be no shared utensils. Even common kitchen tongs should not be shared between pan's, and should be cleaned between each meal. In my opinion (not so humb

I hate those messages with a passion. They really reflect poorly on myself and the chefs under my command. As if i would trust anyone in my brigade who didnt keep my standards, and as if i myself, was unable to control my stations.
