You say you can't fathom it, but then you seem to subsequently fathom it. Dark themes are nice in dark rooms. If you assume most people spend most of their screen time in well lit environments, then puzzlement might seem warranted.

No, you can have both. It's as simple as the author explaining what they mean. But this also requires the author to actually know what they're talking about, and popsci article authors very often don't.

If you're shoveling twice a day, you should consider doing as they do in Alaska and simply stop shoveling it. Drive on the snow if it's snowing so much that you have to shovel twice a day.
