Monero (XMR) has seen nice increases this year, its little brother AEON is flying under the radar atm. I believe it's only available on Bittrex and HitBTC. It may blow up if it gets added to Asian exchanges or Bitfinex.

You should try both. Choose a project and implement it using the two. Start with a basic todo list. Then add support for permissions. Then add support for versioned entries. Then add a REST layer on top.

It says "107.21 M USD EQUIVALENT" without any evidence. I highly doubt that amount is legitimate. Or they may be laundering money as well, I wouldn't spend too much time thinking on this.

I think DAO is a complicated abstraction layer over blockchain protocol, meaning that when you get hacked you don't know how much money you actually lost.

AFAIK teachers spend quite a lot of time grading student papers. This would be easy for multiple choice type homework, but grading essays etc is all manual work at the moment.
