I really like using jazz.tools for those usecases. It lets me iterate 10x faster and i'm super flexible with the schema. Also I can share the data with clients directly without the need of a specific api.

You need a consent as soon as there is a possibility to trace down a single user. Even with the help of the ISP. Just anonymizing the IP will not be enough. We recently introduced a cookie-less mode for https://splitbee.io that
