Yeah, I do recall playing around with that at one point! I remember it saying something like, "I'll remember you said that once robots have taken over the world" if you ever insulted it. Actually kind of eerie in retrospect.

Bitwig will work with all of your existing VSTs, MIDI hardware and of course media (audio samples, Soundfonts etc.) as will Ardour and any other DAW worth using. There's no need to start from scratch.

If you want something that runs 100% locally with a persistent environment, take a look at macOS-Simple-KVM [0]. With some trivial tweaks in virt-manager as well as the guest OS, you can easily create a local macOS VM that you can SSH into
