There's a well-known correlation between site speed, and selling more stuff. So, the idea that a shop wouldn't be interested in having an efficient website is incorrect. As for backwards-compatible drop-in upgrades. They do exists

It sounds like safari is "destroying the web" because some devs would like features that would annoy users, or turn their websites into apps. AV1 support would be nice though. Everyone should push for that.

What do you think about supporting KaiOs, feature phones, older browsers, or 2g connections? Build your websites with progressive enhancement in mind, and you'll never have a problem with safari again. Safari is great.

I think google renders them in a raster format. Whatever they use to do that doesn't support emojis. It could be by design, by rendering any text in the svg icon google is making a design decision for you. They're choosing a font,
