On the off chance you're not aware of it, latexmk -pdf -pvc file.tex does essentially that. If you like Unicode in your source (infinitely more readable and exactly the same keystrokes in Emacs) latexmk -xelatex -pvc source

I've never understood the caps lock/control switch; swapping the ctrl and alt on one side of the keyboard just feels so much more natural to me: left thumb is alt, right thumb is ctrl.
