Installing Pop_OS! or Ubuntu takes about an hour to 90 minutes (including setting up eg Steam, your preffered browser, etc). You'll want to run it as a live USB for a bit first to make sure there's driver support. IME much faster

ISPs can presumably correlate the Google query string with the request following the response to the goto and so make a search index? I guess they would charge too much. Do any large ISPs use visit data to feed into a search index?

If the model includes unique data from a person then that person can identify the data - the allegedly plagiarised material - and so re-identify it. There doesn't need to be a privacy breach to close that loop as it requires the person

We have 'gym for the mind' now in the form of puzzles (eg crosswords, quizes). It's a different sort of complexity to writing assembly or proving mathematical identities ... most people weren't doing those things though.
