It's hyperbolic but it's a common sentiment that I tend to agree with. The web dev world changes too fast and too often, many stacks involve absurd complexity for dubious performance and maintainability and other metrics.

Isn't API key pretty much can always be recovered client side? If API key is hardcoded in the app it's trivial to get. If it's dynamically fetched it's also trivial to intercept the network call. I don't think there

Exactly, she was only CEO since 2014. Saying she made YT is laughable, if anything most of the annoying things at YT happened under her reign, from bogus DMCAs to dislike button removal to the force fed YT shorts and so on.
