This is exactly what I've done with several TVs over the past 5 years. Skip the internet setup, plug in a chromecast, and never utilize any of the built in "features" of the TV. It's worked great for me so far.

Eh, drinking water with bacteria is plenty natural. Water with synthetic PFAS or lead, not so much. Unless the bacteria is actively causing harm or a variety known to be harmful to humans I'd still rather take my chances with the filte
