The entropy in the various particles (photos, neutrinos, gravitons etc) the stars are emitting from being formed probably is more than the entropy lost from the gas clouds ordering themselves into stars would be my guess.

That's circular logic with a dubious interpretation of quantum physics. The idea that consciousness could somehow be the cause of the collapse of the wave function is anthropocentrism and shows a poor understanding of what measurement
