IIRC the only data sent to Apple is the crowdsourced traffic data, which can be disabled. Everything else stays on device or is E2E encrypted.

mutt can probably do something like this with its send-hook [1] feature. Another alternative is to send emails as multipart/alternative with a plaintext part and an HTML part. That way, recipients who use an HTML email client will see

That works when specifying a backup extension, but not if you don’t want to create a backup file. sed -i ‘’ ... works on BSD sed but not GNU. Meanwhile: sed -i’’ ... sed -i ... both work on GNU but not BSD.

Because the -i flag works differently on GNU sed vs non-GNU sed and there is no way to use it portably.
