Don't you think it's a bit backwards to deploy pihole to prevent trackers, while being ok with your DNS traffic being tracked? Agreed though, the DoH recursor should use DNSSEC in actual DNS upstream queries. IMO you want to use

We make physical photo albums and keep a few copies of our favorites, and send some to family. Digitally I keep a few different backups but they are raw and would take a while to sort through.

A mixture of both. I'll typically join with video to wave hi. If there are more than ~5 attendees I'll typically mute audio and video to use chat and hand raise queueing. If it's a quick question I'll use voice only.
