They vary so much by company there's nothing really in common that you can focus on to prep. I've been on a few interviews where I actually wrote code.

I would hire the absolute best most experienced developer you can. Hire someone with startup experience that can do the hands on work needed now, but also manage and scale the development quickly. I would say use the title VP of Engineering

Try bigger companies. Early and mid stage startups won't have the resources for all the paperwork. But bigger companies lacking talent have no problem with it.
