32 ETH wasn't chosen randomly. There is a cost to having too many validators on the network. 32 ETH was chosen to make sure that didn't happen while still being low enough to allow for a lot of validators.

zk-rollups are going to help a lot in that regard. maybe not billions of transactions per day but at least an order of magnitude above what is currently possible, all with the same security as the base layer ethereum

Yes because Coinbase is a legit exchange. It also doesnt use Tether. That doesnt mean that their data on Tether volumes is correct.
