What use would this type of data be to the average consumer? Outside of the obvious question of ownership and argument of who owns the data - isn't this otherwise very similar to being in a plane crash and demanding the black box data?

My principal complaint was going to be "why not a plugin" to the various editors that already exist (eg. VSCode, Sublime, Vim, etc). I saw the screenshot and thought, ugh, YAEA (yet another electron app).

This is more speculative than anything: have you tried eye-patching the good eye to force your brain into being trained to use the bad one? Specifically for a long period of time (months).

We just cancelled our Hello Fresh (which we loved) but if we can buy similar kits at the store we'll probably do so. Hello Fresh boxes are great but their subscription and forced delivery model just doesn't work with our schedule.

I worked on it too. You're right about the head tracking - it did work very well. They had some great UX ideas centered around it too. It's unfortunate it didn't pan out for those UX features alone.
