Have been in the same situation. Get something on paper saying they owe you a certain percentage of stocks in lieu of your services. Also get something called "Subscription Agreement" from them.

Try using Zimbra community edition. You will need a server and some technical knowledge to set it up but it is good. My company's official emails are hosted on Zimbra since long now.
