PDF is a standard, see ISO/IEC 32000-1:2008. And Adobe has done some work to make it work everywhere. There is a PDF plugin for the big three OS's (and Solaris). However, no one ships an OS with this plugin installed by default.

Because unicode support still sucks in a lot of ways. The '—' character doesn't display always properly on my Prē, for example.

I clicked, expecting it to be an audio/video clip that I'd maybe, possibly get around to listening to/watching. Pleasantly surprised to find it was a transcript of the speech instead. I still put it into Instapaper, though.

I use a MBP with an SSD for iPhone dev. The only difference is the screen size; 15" vs whatever size you have for the Air. Xcode runs much faster now. Its still going to be the slowest (and largest) application you'll load (besides iTunes).
