At this point I think it's the structure that's the hard part, it's important to people and we have a hard time reproducing it. Plus even if it's not the original structure it has to be something; nobody wants to drink meat slurry. Personally I'm a fan of Impossible but I still have never tasted a good chicken-substitute.
