A lot of people don't know their rights at the hospital and just blindly listen to the staff. As with everything it's important to learn as much as you can. These women should have never let blood be drawn at all and never should have allowed they baby to leave their sight.
Obviously in the case of complications this needs done but with normal births you don't need to allow blood to be taken from the mother or child. Just decline all tests. Have someone with you, the father, to back you up. Be prepared to call the news media.
My wife had our first 2 kids at home but our third we were lazy and decided to use a nurse-midwife at the hospital. We had the baby at night and the night staff was great easy going no problems. The day staff come in and start bossing us around and that was the end of that. My wife said she wanted to go home, done she can walk we're going now. They tried to stop us and say we must wait for the doctor who's making the rounds and they need to do tests etc... I told them there's no medical emergency so you can't keep us, if the doctor wants to look at the baby he better come now because we're leaving and there will be no tests. Doctor shows up in 10 seconds flat, looks at the baby while my wife held her and they wheeled her out 5 minutes later. That was that.
I believe that the hospital staff generally believes they're doing the right thing, but that "right thing" is a general purpose thing without considering the specifics of individuals. Because there's a difference in hospital policy and law and even most health laws have exemption for religious beliefs. It's very important to have a good understanding of these things and push back when needed.

That doctor was probably seeing somebody else and had to interrupt them to deal with you. Not sure that's really a good outcome, TBH. As for bossy staff, like anything in life, there's a more effective way to do than insist to see the manager immediately.
