My wife went to CIA and is starting a local gluten free bakery while I keep the full time tech job and help out here and there. We are starting very slowly; almost entirely word of mouth for now. We intend to build our base slowly. There is certainly demand for gluten free baked goods. We will hopefully be able to hire someone soon.
