A Brief History of Jamaican Jerk
- bookofjoe 6y agoOh! Mr. Organizer, near Ocho Rios beach in Jamaica, in the 1980s. Best jerk pork/chicken EVER, grilled on a big sheet of perforated corrugated steel over pimento wood. https://pimentowood.com/ https://pimentowood.com/
- konfusinomicon 6y agoThe people that run that website are amazing, I've met them on several occasions to pick up an order and they always hook it up with extra stuff. The marinade they sell, Spur Tree brand I believe, is the best. I bought a gallon of it last year and am probably 2/3 through it. It's good smoked with apple wood too but the pimento imparts a flavor that just can't be beat.
- jpster 6y agoCool to learn that jerk is due to the meeting of Jamaica’s African and Native peoples. My food heritage comes from Guyana, and our traditional Christmas dish of pepperpot — beef stewed in cassava syrup — has a similar background. The enslaved Africans learned it from the Amerindians. And the method itself is built on food preservation technique. (Simmering it daily allows you to keep it unrefrigerated for days.) Got a full pot of it on the stove right now :-)
