Heh! I did both of those jobs as well. I still remember the large plastic tray you had to use to organize all the little parts and O-rings. Did you ever have a clever employee that thought they could use the 5-gallon plastic buckets as a quicker way to dispose of the old fryer shortening? I watched that happen one Sunday morning.
