I still have a hard time understanding what kind of value can be extracted from user data. Who uses this data? For what purpose? How can this data give an edge

I still have a hard time understanding what kind of value can be extracted from user data. Who uses this data? For what purpose? How can this data give an edge to make money elsewhere? Is there a real relationship between data collection and ability to sell more things and increase profits? I'm not seeing it.
