Valve Index will work with any SteamVR game natively, and with a community-maintained wrapper, will work with many Oculus exclusive titles as well.

The Oculus Rift S and Oculus Quest are both in active production; they're just usually sold out (as is the Valve Index, presumably being the $1000 headset you're referring to.)

I don't think there's a pre-built FPS VR template from Unity, but it is pretty simple for basic projects. Word of warning, though: VR locomotion is very different from FPS locomotion, and gets very complex pretty quickly.

For simple 2D games, I feel that Godot is often a far better choice than Unity. However, I've never used Godot's networking or multiplayer features, so I can't comment on those.

The docking is automated by default. The manual controls are only to be used in case the automated docking doesn't work.

Are you sure it's ULA? United Launch Alliance build rockets, not capsules. Boeing's Starliner is the closest analog to the SpaceX Crew Dragon.
