If it's been a little while since you last looked at Atom, then consider trying it again, they've spent some effort on optimising it lately. I mean, it's still not the speediest around, but it's improved leaps and bounds

OmniSharp-Roslyn is planning on utilising VS RefactoringEssentials[1] sometime in the future[2], which used to be NR6Pack (and part of NRefactory 6). RefactoringEssentials is based on Roslyn. So don't worry about OmniSharp too much :)

My guess is, they figure that most non-tech people will continue using IE 11 if Edge was not shipped with Windows 10 rather than moving to Edge when Edge shipped.

That's the thing, it might well be on "mum's (next) tablet" (probably not phone). There's a raft of really cheap (7/8/10 inch) Windows 8.1 tablets that are price competitive with their Android equivalents.

I think the focus of the CLR/.NET team at MS at this stage is on the server side (eg: ASP.NET). So it's not going to suddenly open the floodgates of .NET apps running on a Mac. That's still a long long way away (if at all).
