I also had this issue. I had to ignore all their social features but overall I think the core app is fine. It won't make you fluent but it does teach a lot, and at least for me, I remember a lot of it. I can't say I learned french

My macbook air does this as well. This isn't limited to newer phones. I checked mine, I have an iPhone 12, and this option is in there. According to the support page it's available on iOS 13+.

It does not work by default and it does require input from the developer. The UIKit API allows you to detect that you have it enabled but it doesn't magically redefine all the colors for you.

SwiftUI is about 90% production ready if you're targeting the latest OS. The other 10% can be very nightmarish though if you run into any issues.
