Why 2D convolutions over a spectrogram instead of 1D convolutions over the waveform? It seems strange to do that small amount of feature extraction if deep learning is being used anyway.

There are plenty of fixed assumptions within deep learning. Off the top of my head: (1) Loss function (2) Pooling layers (which hard code invariances)

I think a bigger issue is that GI is only defined over 2 hours after eating. The four-hour GI is always higher and a much better indicator of high blood sugar exposure (due to eating that food). After all, pizza is low GI if you only measur
