Git describe is what you want. it will take the nearest tag name and use that as the version with the number of commits from that tag as the release value.

I think the sublime issue would occur if your ~/.config/sublime-text-$ver folder is borked additionally there are now packages for it so it installs very easily

Perhaps something like btrfs could work. By creating your base image in a subvol or individual file you can then snapshot that and mount the snapshot into the container? additionally it lets you piggy back on the stuff that inktank and open

Counter steering is incredibly freaky when on the bike as well. You force yourself to fall and let the bike catch you and damn it is disconcerting the first few (hundred) times.

Puppet does add some significant runtime lag unless you add in other orchestration tools. additionally if operations include cross host dependencies puppet is probably the wrong tool to use.
