You can keep your eyes closed or not look at the phone. I believe iOS needs your attention to allow biometrics. And a few times it fails, it will require the password.

And in support of this comment, Apple ID users DO have the option of sharing their email addresses if they want to. So, from the receiving end, if you see somerandomstring@appleid.apple.com as the email address, it should be pretty clear
