The sandbox is extremely limited protection. There's no recourse against misuse of data you grant permission to use, but in the main App Store Apple can kill a deceptive app

That's a user choice. iCloud supports storage if encrypted data and disabling unencrypted backups. It's fine that you reject the legitimacy of government, but unreasonable to expect huge organizations to do the same while serving

If hacker hack your systems, they get the decryption keys too. They just might need to hit two separate targets with two attacks or a attack that both are vulnerable to.

Zero trust protects the servers, not the network, and not the data. Protecting the data means encrypting it (which Google also does) such that the client needs a key to decode it. But if the client is hacked, the hacker can get their keys!

At least for government employees, if not all non-office workers, government should simply mandate to that any building open to the public must allow use of its bathrooms.
