Yes, but you still can't guarantee anything about the host the docker container has to run on, so you're still impacted by host configuration and therefore still need to provide a good base environment for running your containers.

I wish there was a way to just get a wildcard and use it to issue "sub certificates" of some sort. ie: *.internal.mycompany.com could be used to issue valid certs for git.internal.mycompany.com...

I'm not so sure this is a great idea, quite commonly when reverse engineering something I need a good reliable implementation of a dated cipher. MD4 is still used in NTLM, RIPEMD160 is still used in Bitcoin and other cryptocurrencies,
