Private relay is only active when using Safari on iOS / macOS. It's not a system wide VPN that can be used by spamming tools.

If your use case needs more RAM then simply chose the 16GB option. 8GB RAM is fine for a large portion of casual users and if it keeps the base price down I'm okay with it.

Single core vs multi core. The top Intel MacBook has 8 cores and only beats the M1 (4 performance cores) by 1 minute. The desktop Hackintosh most likely has way more cores, expecting the low power M1 to beat it is unrealistic.

All these things work with 8GB RAM. macOS uses all available RAM aggressively, so if you have 32GB RAM it will appear as what you are doing requires 32GB RAM, which is not the case.
