It’s not as if the OP can’t install a different OS that does support x64 processors. The OP is describing a Hackintosh , so there is no vendor lock in. For that matter, installing alternatives on x64 based Macs is also reasonably trivial a

There kind of is. Restart in recovery mode, open a terminal and type `csrutil disable`. Also, there are finder extensions that do what you suggest.

I'd add that DKIM is relitively simple to configue and, along with SPF, is a worthwhile endovour. It's considered as basic hygiene by spam filters.
