Seems like you should take a look at https://deb.sury.org/ PHP 8.0's release wasn't long ago enough to fit into the stable release, bullseye was too close to the initial freeze period when that happened.

Debian has been doing a stable release every two years since 14 years now. If you want the equivalent of a non-LTS Ubuntu release, you should use Debian Testing (besides the naming, it's pretty stable)

I would put Debian Testing on that list. Although it's called "testing", it's at least as much stable as Arch and very suitable for the desktop user, Debian's "edge" release is unstable (codename sid).
