I find the thermostat mode only works on overcast days or at night as the sun contributes so much feeling of warmth when driving (in California) that the heating and cooling thermostat doesn't work well.

I think that all postdocs should stay in academia, why else would you do a postdoc? I assume (maybe wrong?) that most of the postdocs had intended to stay when starting the postdoc.

Its a totally usable pen everyday if you want. I don't think most people spending $40 on a pen put it in a display case, its not a $4000 pen.

Yup, tons of home cooked recipes that rely on emulsions (gravy, cream soups, salad dressing, pasta sauces) often end up oily and broken.

I'm not sure most cookbooks claim to offer an optimal recipe or even that there is an optimal one and that preference may play a big role. Some sites like serious eats do more investigation but I agree, I really like the phase diagram

not exhaustive, but this paper ( https://pmc.ncbi.nlm.nih.gov/articles/PMC8070520/ ) shows very low levels of a few of these compounds in carrots compared to other edibles (ex. grapefruits).

I got habanero peppers over my hands once (was dumb and didn't wear gloves) and the only thing that helped was quickly rinsing with bleach. Problem was solved.
