You do realise that already happens though? If you read apple's privacy policy they send a lot of what you do to their servers. Furthermore how private do you think Siri is? Their privacy policy explicitly states they send transcripts

I use it myself, but I'm thinking about leaving. The lead developer you refer to is still in charge despite what may have been posted. He is a known to suffer from extreme paranoia and to this day remains overzealous in banning anyone

No. I use adguardhome to act as a private DNS for my android devices. It's the best way to get both DNS for self hosted services AND DNS filtering to remove tracking and ads in all android apps.

You can do it some routers (e.g. opnsense) that let you retransmit that (e.g. with UDP broadcast relay). The main downside is that you have to set it up for each type, and open ports, troubleshoot a lot, waste many hours, etc. I used to do

I used to use a GL.iNet device as a travel router in the past but I would never do so today given they are made under CCP control. You'd want to flash stock openwrt but then you'd lose the simple/quick UI.
