My understanding is that everything is encrypted by default in GCP. Though you need to manually configure encryption keys if you want to prevent Google ever having access to your data.

The bitrate won't be a problem with Twitch since their maximum bitrate is super low. Just depending on where you live there might be outages every now and then if all the satellites are behind trees or buildings.

You don't even need to "disable" Chrome. Just set Firefox as the default browser. I haven't noticed any Google apps that wouldn't respect the setting.

As others have mentioned power companies in California pay a lot for virtual power plants when the demand is high. If power companies can avoid running an expensive peaker plant once a month, everybody wins.
