I was looking at running OpnSense for my router and almost used my old Skylake computer. Instead I bought a $100 fanless Intel N100 micro computer that sips 7w and has about the same performance. The electricity savings will pay for itself.

I suggest reviewing this data again, especially with the understanding that the timestamps are in UTC. 0027 UTC corresponds to 1827 in CST (the timezone for Texas). During prime time, this user was often around 10mbps.

WDT basically always gives a boost in extraction, regardless of grinder. I haven't seen anyone recommend against it. You can get by without it but if you can put up with the minor hassle you should do it.

Sorry I just meant that I see people online suggesting longer resting periods, especially for lighter roasts.

You might find it interesting that suggestions are shifting. It largely depends on the roast level, darker roasts should have a fresher date. However there are now some "Nordic light" roasters that specifically recommended 2 or 3

Hendon, the head of this research, stated that the humidity in the grinder went as high as 70% iirc but the humidity would dissipate within a matter of seconds. It may matter for some grinders but he stated no concerns.

OPVs typically divert the water back into the water tank of the machine. That's at least how it worked in my machine. The only machine that immediately comes to mind that wastes water like that is the GS3 MP from LA Marzocco for $7,500
