Finder can be tamed if you master its keyboard shortcuts. For example, in a folder of photos, press Cmd+Y to view a single photo. Then use arrow keys to browse photos, Windows-style. Indispensable. Or, Cmd+Backspace to delete a file.

Not a fan of iTunes myself and its all-or-nothing sync behavior does ask for more. Fortunately, it has been possible to update the device or download purchased content directly on the device for a couple of years now.
