Rmoving your notebook HDD and retrieving the files with a SATA-USB adapter connect to a 2nd device should be fairly straightforward for most models. Not a fix though.

AMP header breaks even Chrome UX for me. It somehow ends hiding the address bar and replacing it with the AMP one once I've started to scroll down, and the only solution is to scroll all the way to the top again. I have the address bar

That's the mobile provider fault, not Android's... And no custom ROMs are necessary for root usually. Also, what makes you prefer macOS UX than Windows or Ubuntu? They surely have their downsides, but I don't think they'

Those aren't hardware-focused companies, but I'd say Adobe and Autodesk do quite well on maintaining high quality products (and, like Apple does, being pricey)

I disagree with the notion that they're ambiguous at all. Foxit and Fox-IT have quite a noticeable difference in their names, IMO. (although they do have the same letters, so I get your point)

There are USB disc readers, USB floppy readers, USB to RS-232 cables, you name it. No need for SATA. They usually aren't very expensive either.

I am no security expert, but if a machine in the local network gets infected and tries to access your ME, then NAT can't prevent the attack. That's the only other vector I can think of.
