https://gnucash.org/ is a mature project that allows you to manage expenses & assets, perform analytics, and doesn't require supplying personal information to third parties (plaid in this case)

Strange -- was that for a US-based location? I just tested it in windows based firefox & debian based iceweasel and it seemed to work ok. I don't have a Ubuntu system handy at the moment.
