Unix is not just a set of terminal commands, it's the whole system architecture, and the fact that all those derive from the original old AT&T Unix. If I run the Bash shell on Windows, it won't turn it into Unix either..

Depends. Highly specialized apps (Blender comes to mind) fare better using custom toolkits. Anything else probably should use the platform-native one, not only for looks (lots of really great mac-only apps use customized widgets, see Things

Anything HomeKit is local-first. That's one thing Apple actually got right, and thankfully has pushed into the new Matter industry standard too. Won't work without some Apple device though of course.
