Just to be clear, Dow bought out the remnants of Union Carbide, after they died post-Bhophal. It didn't happen as part of Dow. Dow is extremely safety conscious, and the inexcusable things Union Carbide did would never have happened in

I also think this is one of the best entry level books, and the Stanford course looks good. This is what I recommend to people. In some ways, R is a very good match for this material, and you could move to python later.
