You don't compare numbers against the previous quarter, you compare numbers against the same quarter, the previous year. Apple's gross margin this quarter was 40.3 percent, compared to 36.9 percent in the year-ago quarter

these "estimates" are artificially inflated by hedge funds with short positions in AAPL. AAPL didn't lie. they're just conservative.
