The author didn't say so, but I'd assume these sensors must be placed in a small oven of some kind, so as to introduce averaging and hysteresis of temperature. When I brew my beer, I need to look at the environmental temperature.

Same here. I really like NextDNS because you can adjust it such that it also blocks network traffic inside apps.

Not OP but I would enforce the maximum of 25W by standardizing on a particular power supply. To prevent usage of batteries or capacitators, demanding people bring their own hardware with removable casing. You can then inspect the PCB(s).
