Virtual Desktops are not a substitute to multiple monitors. With multiple monitors you can have several full screen windows open at the same time. Like coding in your main screen and seeing documentation/web browser in the other.

You can change the UI font size in: Preferences -> Appearance & Behavior -> Appearance -> Use Custom Font | Size

C# is a very good language. I like it a lot, and Visual Studio is a fine IDE, but the tools pale in comparison to the JVM tools (Maven, Gradle, IntelliJ, Eclipse, Spring Boot, GraalVM, etc)

An HP Elite Lapdock and a Note 9 will get you 90% of the setup you want. I have that setup, it doesn't dock into a slot, it hangs on the side with a USB C cable, but the rest is just as you describe.

That's mostly Gradle. Jetbrains IDEs are not exactly lean, but Android's use of Gradle is an exercise in patience, even on the command line.
